If you’re anything like me a too-strict diet plan can really backfire. Tell me I can’t eat sugar and nothing will send me flying to the pantry faster. Rather than depriving myself of a much needed 4pm sugar fix I come prepared with healthy, natural sweet treats that won’t blow my diet. This is a really simple recipe and what I especially like about it is the hint of orange. It gives it a more ‘grown-up’ flavour that’s rather satisfying. Hope you enjoy!
Date, Orange and Walnut Balls
- 3 cups of chopped dates
- Zest and Juice of one orange
- ¾ cup of Walnuts
- 1 teaspoon nutmeg
- ¾ Cup of Coconut
Add all ingredients except the coconut into the food processor and blitz until all combined
Spoon a tablespoon of mixture into clean hands and roll into balls
Once you have finished the rolling process, heat a dry pan on the stove top and add coconut. Shake pan over the heat until the coconut is light browned. Be sure to watch it as it can burn quickly!
Remove from the heat, allow it to cool for 5 minutes and roll the balls through the toasted coconut
Makes 15 balls
