This is pure cookie dough heaven! Honestly if you love cookie dough, this recipe is for you. The only problem is it’s so damn moorish I can’t keep it in the fridge for more than a few days.
The original recipe called for more macadamias (I halved the amount and replaced with almonds instead to reduce the calorie count a bit) and there was also ½ cup of chia which is optional. Works just as well without in my opinion.
3 cups pitted dates
½ cup of macadamias
½ cup of almonds
1 ½ cups of shredded unsweetened coconut (plus extra for coating)
½ cup of unsweetened dried apple
1 ½ tbls coconut oil
½ tsp vanilla extract
½ cup chia seeds (optional)
Blend all ingredients on high speed in a food processor for about 3 minutes until if forms a dough. Place dough onto a surface covered in coconut flakes and roll into a log shape (or whatever shape you like really)! Tightly wrap in cling film and leave to set in the fridge overnight. Don’t skip this last step, it completely changes the texture and turns it into cookie dough-like heaven.
